Pickled Peppers are a delightful way to preserve the heat and flavor of peppers while adding a tangy twist. Originating from various culinary traditions worldwide, pepper preserves have become a staple condiment in many cuisines.


Pickles are generally made by soaking vegetables in a solution of vinegar, water, salt and seasoning, and then stored in airtight jars. The acidity of the vinegar helps to preserve the peppers by creating an environment that inhibits the growth of harmful bacteria, yeasts, and molds. This pickling process not only extends the shelf life of the peppers but also enhances their flavor profile, imparting a delightful taste.

Pepper preserves can be made using a variety of peppers, ranging from mild bell peppers to fiery hot chili peppers like jalapeños, habaneros, or even ghost peppers. Depending on personal preference, other ingredients such as garlic, onions, herbs, or spices may be added to the brine to enhance the flavor and complexity of the preserves.


In terms of health benefits, pickled peppers retain many of the nutritional properties of fresh peppers, including vitamins, minerals, and antioxidants. Additionally, the presence of capsaicin, the compound responsible for the heat in peppers, may offer various health benefits such as pain relief, improved metabolism, and enhanced cardiovascular health.


When choosing vinegar for making pepper preserves, options like apple cider vinegar, white vinegar, or rice vinegar are commonly used, each imparting its unique flavor profile to the final product. It's essential to use vinegar with a minimum acidity level of 5% to ensure proper preservation.


Pepper preserves are incredibly versatile and can be used in numerous ways in the kitchen. They add a spicy kick to sandwiches, burgers, hot dogs, and tacos, or can be served as a condiment alongside cheeses, charcuterie, or grilled meats. They also make a flavorful addition to salads, stir-fries, or marinades, providing a burst of flavor and heat to any dish.


Here's a basic recipe to make pepper preserves. You will need to sterilize the glass jar because it is an essential step to ensure food safety when making preserves. Here are some simple instructions for sterilizing the glass!


Ingredients:

500g of peppers of your choice (jalapeño, habanero, serrano, etc.)

2 cups of apple cider vinegar or rice vinegar

1 cup of water

2 tablespoons of salt

3 cloves of garlic

2 bay leaves

8 black peppercorns

2 sprigs of thyme


Instructions:

  1. Wash the peppers thoroughly and cut them into slices or small pieces. If desired, you can remove the seeds to reduce the level of spiciness. Normally we remove the seeds from half of the peppers, unless we are doing them whole preserved.

  2. In a small saucepan, mix equal parts of vinegar and water. Add a pinch of salt and bring the mixture to medium heat.

  3. Once the mixture starts to boil, add the sliced peppers and, if using, the garlic and herbs. Let it simmer for about 5 minutes.

  4. Remove the saucepan from the heat and let the mixture cool to room temperature.

  5. Transfer the peppers and the liquid to a sterilized glass jar. Ensure that the peppers are completely submerged in the liquid to avoid contamination.

  6. Seal the jar tightly and store it in the refrigerator for at least a week before consuming. This allows the peppers to absorb the flavors of the liquid and mature.


After the resting period, you can consume the pieces of preserved pepper, or blend them in a blender to obtain a uniform and thick sauce.


This pepper preserve can be used as a condiment in a variety of dishes, such as tacos, sandwiches, salads, and more. Remember that you can adjust the recipe according to your flavor preferences and spiciness level.
